Eat: Miso Ramen.

It's hardly authentic, but it is darn tasty. I present to you, miso ramen:




After purchasing red miso from Uwajimaya for a recipe, I knew I wanted to make some more-or-less proper miso with the remainder. All that remained was to pick up some dashi powder, and tofu. Except I'm not a huge fan of tofu. So I decided on udon noodles for a quasi-miso, quasi-ramen combination.




Miso Ramen

1 serving: 221 calories, 45 grams carbohydrates, 1 gram fat, 3 grams protein.

3 cups water
1 packet instant dashi powder
1 50-gram bundle udon noodles
1 scallion
1-1/2 tablespoons red miso

Bring the water to a boil, and stir in the dashi packet. Meanwhile, chop the scallion, and in a small ramekin, stir together 2 tablespoons of hot broth with the miso.




Add the noodles, and gently stir until they are cooked through. Add the scallions, stir. Turn off the heat (for the Japanese claim that boiling miso kills the healthful bacteria) and stir in the miso mixture.
